Cheese and Mushroom Omelette

This recipe is one part of the recipe Holiday special wholesome breakfast

Ingredients (serves 2) var _gaq = _gaq || []; _gaq.push([‘_setAccount’, ‘UA-36452076-1’]); _gaq.push([‘_trackPageview’]); (function() { var ga = document.createElement(‘script’); ga.type = ‘text/javascript’; ga.async = true; ga.src = (‘https:’ == document.location.protocol ? ‘https://ssl’ : ‘http://www’) + ‘.google-analytics.com/ga.js’; var s = document.getElementsByTagName(‘script’)[0]; s.parentNode.insertBefore(ga, s); })();

1/4th cup grated parmesan cheese
1 cup chopped button mushrooms
1 cup spring onion chopped (optional)
1 medium sized onion chopped into large pieces
[Separate out each piece of chopped onion from one another]
1/2 tsp grated ginger
2 tsp chopped cashews (optional)
3 eggs
1 levelled tsp black pepper (or chilli flakes)
[beaten along with a pinch of salt]
1 tsp olive oil
salt to taste

Add oil in hot pan, when its hot, add ginger and onion and stir fry for 2 minutes.
Optional : To make it a bit crunchy, you may add cashews at this stage and fry for few seconds.
Add spring onion and fry for 1 minute. Add mushrooms and fry for 2 minutes on high flame.Sprinkle some salt and mix well.
Spread the contents of the pan evenly and pour beatens eggs on top, spread it by titling the pan in all directions. 
Sprinkle grated cheese and pepper(or chilli flakes).
Simmer the flame and cover pan with lid. Leave it to cook for 5 minutes.
[Cooking on low flame for long time is important because then you don’t have to flip the omelette to other side. If you prefer half boiled egg then turn off the flame when you find it as per your liking..]

Chicken Caesar Salad

My family’s all time favourite salad and I had to try it at home.
So simple yet so yummy. Who says it takes great effort to dish out mouth watering dishes! this recipe proves the theory wrong 🙂

Ingredients (serves 2)
250 gms boneless chicken (breast pieces)
50 gms grated parmesan cheese
1/2 cup cream (or ready made caesar dressing available in stores)
3 cups chopped lettuce 
2 cups chopped pineapple
1 chopped onion
1 tbsp Teriyaki sauce
1 tsp black pepper
2 tsp olive oil
4 garlic cloves crushed
1/4th spoon dijon mustard (optional)
salt to taste

Preparing teriyaki chicken..

Pat dry chicken pieces after washing thoroughly. In a bowl, add teriyaki sauce, olive oil,garlic,mustard sauce, black pepper and salt, mix well. Add chicken pieces to the bowl and coat them well with the misture.

If you are using oven, prepare your rotisserie by greasing it well for grilling the chicken. Pierce the chicken pieces on to the rotisserie and grill for 25 minutes in oven.

If you are not using oven and you have a grill pan, fry the pieces on the pan with little or no oil.
If you are not using oven and grill pan, just fry it on regular pan.
[Difference between grill pan and regular pan is that, grill pan has ridges on top which gives chicken a grilled look]

Grilled teriyaki chicken will look like this..Behold! the last step is remaining! Try not to finish off the chicken before the salad is even ready..  trust me, its worth the wait 🙂

The last step, salad..
Chop the grilled chicken to small bit size pieces.
In a big bowl, add lettuce, chopped pineapple, onion.chicken, cream (or caesar dressing) ,cheese and some salt. Mix well.

Salad is ready to savour!
